Black fettuccini with shrimp and roasted tomatoes

Colored with squid ink, this handmade pasta dish exemplifies the dishes at La Chaya. A blend of Italian and Mexican (both of which Chef Garcia is trained in) this pasta is light and freshly scented with lemon and olive oil. Not to worry, the squid ink is not noticeable on the palate, but stunnig to look at.
