Tosca's Spring brodo
Open just a matter of weeks for dinner, Trattoria Tosca in Linden Hills is a romantic date-night spot that serves locally sourced Italian cuisine. Light wooden tables contrast with the high, dark walls creating an intimate, yet airy ambience for the dining experience.
The small menu features traditional dishes finessed by Chef Adam Vickerman's touch that keeps the dishes interesting and fresh. An example is the bruschetta, which is served as a duo of toasts - one dressed with beans, arugula and parsely and the other with a delicate and smooth chicken liver pate topped with pickled ramps. Pastas and entrees are offered as well, ranging from the spicy tomato and garlic bucatini to a succulent pork loin served with tender cannelini beans in a light, lemony sauce. The menu will change with the seasons and will feature what is locally fresh.
