Sage Wine Bar and Market
In wine making, the term “terroir” refers both to the environment and conditions in which a grape is grown, but also to the characteristics of a wine’s flavor that it draws from that environment. Just as it is challenging to grow good grapes for wine in Minnesota, it would seem to be difficult to create an inviting wine bar in a strip mall. And yet, here it is. Motivated by a passion for both wine and the great state of Minnesota, Sage has culled a range of desirable elements from their terroir while eliminating most of the blandness with pleasing results. Still, I can’t help but feel that there is something a little green and unfinished about Sage. The recipe is sound; it just needs time to mature so that it may express its character more fully.
